Drop scones
Similar to small pancakes, kids love these. Quick to make and you can even make the batter the night before and leave covered in the fridge overnight. Team up with some fresh or even tinned fruit, and you have a great meal to start the day.
- 1 cup self raising flour
- ½ cup of milk
- 1 egg
- 2oz sugar
- pinch of salt
Combine all the dry ingredients and stir well. Add the egg and milk and beat to a smooth batter.
Heat a teaspoon of oil in a heavy based pan or skillet.
Drop spoonfuls of the batter into the pan, tilt to spread slightly and cook on each side until bubbles begin to rise and burst. Flip over and cook until golden brown.
Ideas to add are strawberries, kiwi fruit, bananas and honey, pineapple rings, plus if you must a small dollop of cream!
Pan tostada (Toasted bread with tomatoes)
This is my son´s favourite breakfast recipe. For best results, use soft, slightly over-ripe tomatoes.
- sliced crusty white bread, day old or slightly dry is better.
- whole fresh tomatoes
- olive oil
- pinch of sea salt
Simply toast the bread under the grill, drizzle with the olive oil. Gently fry the tomatoes in a little oil until soft and then place on top of the bread.
Sprinkle very lightly with sea salt ( omit or go easy if it is for kids)
You can also sprinkle grated cheese over the bread and pop back under the grill until melted for a lovely cheese and tomato version.
Ready in an instant!
